The subject of "piri-piri" pops up regularly here....here's a marinade recipe from Recipes Now: Chicken Piri-Piri 2 to 6 dried hot red peppers 1 tsp kosher or coarse salt 1 cup olive oil 1/3 cup cider vinegar Chop the peppers, then mix them with everything else in a 1-pint shaker jar, cover tightly, shake, and store at room temperature. The sauce should keep well for a month. Shake the sauce every time you use it. Marinate the chicken in the sauce and then grill outdoors until done. A historical note: The piri-piri peppers were brought from Brazil (Portuguese New World settlement) to Angola (Africa). The peppers became so integral to the local cuisine, that they became known as "Angolan peppers." From there they made their way to Portugal. -- --------========********<O>********========------------- Myron Menaker Daytona Beach FL USA myronm@bellsouth.net | \ / _\/_ .-'-. //o\ _\/_ -- / \ -- | /o\\ jgs^~^~^~^~^~^~^~^~^-=======-~^~^~^~~^~^~^~|~~^~^|^~` I'd rather be singing! | | --------========********<O>********========-------------
