Hey folks, Thanks for the replies to the Cinco de Mayo post. i've learned that there seems to be no apparent "signature" dish for this festive date. but that's OK, i had beans & rice & roast chicken , called it pollo negro y blanco con chile , and enjoyed the occasion ! co-incidentally, May 5th was Kentucky Derby Day . and although mint juleps are the traditional beverage , well ... i just didn't have any Bourbon ( apologies to Jack Daniels fans, but i truly prefer the lowly rated Kentucky Tavern ) . nonetheless, undaunted , i took measure of the ingredients at hand , and with some cheap dark rum , a lime or two, and fresh mint from the garden .... crafted some dandy mojitos !! ( back-stroking red aphids adding colour to the drink ) thanks to whoever posted that cocktail recipe, it's a beauty and may become my regular Derby Day bevvie ( with rum , of course ) ! stay chilified , peter g
