Here's my brother's recipe for chipotle stock. It's glorious. -Begin Recipe Export- QBook version 1.00.14 Title: Mike Adkins' chipotle stock Keywords: soups, stock, chiles 10 c. water 6 large dried ancho chiles, roughly cut into chunks with shears (don't bother seeding) two 7-oz. cans chipotles in adobo sauce (I used La Costeņa brand) 1 1/2 large green bell peppers, cut into chunks (again, don't bother seeding) 1 1/2 medium white onions, quartered 4 large cloves garlic, coarsely chopped 2 ribs celery, leaves and all, cut in 1" lengths Generous dash Worcestershire sauce 3/4-1 c. red wine (dealcoholized is okay) 3 Knorr vegetable bouillon cubes 1/2 tsp liquid smoke 1 Tbsp cumin 2-3 sprigs each fresh oregano and marjoram 1/2-1 t. chocolate extract Small chunk country bacon, salt pork or soy bacon for bouquet Bring water to boil and dissolve bouillon cubes. Add all other ingredients and simmer at least two hours. Strain through fine mesh sieve. It's the color of red-eye gravy and has rich, smoky pepper taste and pleasant heat.
