For what it's worth, I went to www.google.com and searched for "new mexico chile roaster" and got a bunch of good results. I didn't see anyone actually selling roasters, but I'm sure you could find someone to help you out. I saw one name I recognized -- Andy's Chile Roasting. He roasts the chiles for the Los Angeles chapter of the UNM Alumni Association. I purchased many a roasted chile from this fellow at the annual fall chile roast when I was living in So-Cal. At any rate, he might be willing to tell you where (if?) he purchases his roasters. Good luck. The owner of the market said they roasted around 100,000 lbs of chiles a year. My question are these, why roast the chiles? Are chile roasters available commercially, or all of them homebrew? They roasted chiles and then put them in plastic bags with oil, I believe. Mike D & M Farms Chardon, Ohio
