The main problem is how does the RESTAURANT gauge a patron's tastes? Well, you can't. That's up to the customer. Restaurants are forced to serve food to the populous not a minority of fire eating chile heads ... hehehe, or in the case above, a perceived chile head. ;-) It's not everyone who can sit down and eat a small bowl of jalapenos. In fact, most people DON'T just chow down on a pepper, typically, it's used IN the food. ;-) I've been caught myself a few times when eating some mongo big jalapenos at a local mexican restaurant. One one visit, the waiter emphasised (after serving me countless times before) "THESE are hot". Didn't look any different to me....but, tasted quite different once I got near the stem. I've NEVER had jalapenos so hot before! We eat at a couple local chinese restaurants on the west side of Indianapolis. We used to be regulars at a particular local chain when we lived closer to I-465. They got to know me well enough to really fire up General Tso's chicken for me. ;-) But, currently, I bring along my bottle of chile paste and squirt it on.
