You are correct Muslims don't eat pork.  Hindus do not eat beef.  Christians 
eat it all.  LOL

The food of Southern India, Kerela in particular is especially pleasing.  It 
is 1/3 Muslim, 1/3 Hindu, 1/3 Christian IE Assyrian Catholic.  Interestingly 
enough the religious factions coexist quite nicely there unlike the North as 
in Delhi and especially in Utter Pradesh.  Kerela is the gentle India!  I 
highly recommend a holiday along the back waters there.  I have been fort
unate to have many wonderful business trips to this area of smiles and Chiles!

The food in the South is definitely hotter, however they do use coconut milk 
in their curries.
