At the risk of someone confusing me for someone who might actually KNOW something, it seems to me that I have read (and experienced) that MODERATE plant stresses will indeed produce a hotter chile. One theory is that capsaicin production is a defense mechanism of the plant and, therefore, in the presence of stress (attack) it will produce more cap. Could also be that drought usually occurs with hotter temps and hotter temps are also said to produce hotter chiles.
