Green Chile stew, which I have posted before, and is archived at PepperFool. In fact it is one of the first ones I ever posted to the list away back. Tonight I did Rice and Lentils, or Kitchri, which I have been doing for many years, to accmpany it. Haven't done it for awhile, so I did my original recipe, when we had 7 kids to feed! Cut it in half, and it will be right! We two will be eating Rice & Lentils for about a week, at least! It'll stick around longer than SirCam virus!! 1 cup rice 1 cup red lentils, washed and let dry a little 2 BIG onions, peeled and chopped 2 tbls mixture of olive oil and butter 5 cups of boiling water 2 tsp salt 2 tsp garam masala 1/2 cup of chopped cilentro 1-2 seeded, chopped jals or whatever hot pepper you have on hand. Lightly fry the onions in the oil mixture, until limp, and remove half of them to a bowl. Push the other half to one side and fry the rice and lentils in the oil. Add the salt, garam masala, cilentro and the chopped jals and simmer this for about 5 minutes, then add the boiling water. Cover this and turn heat to low, set timer for twenty minutes, fluff, and serve. Cheers. Doug in BC
