First post, Have a hot oil recipe I'd like to share that's pretty easy. Gather the following: Canning jars with screw type lids New seals for same Pot with pour type edge Cooking thermometer Grapeseed oil Hot Pepper of your choice Clean peppers and slice into rings or pieces of a size that will fit into jar. The first couple of times you try this I recommend you vary the amount of peppers in each jar so you can find the right heat level that works for you. Run jars, lids & caps through dishwasher on temp boost and hot rinse but do not dry. Heat oil while watching thermometer and put varying amount of peppers in each hot jar. When temp reaches 300 degrees F pour hot oil into jars VERY SLOWLY as it will boil moisture from peppers & oil from jar. Cap immediately and check after cooling for proper seal. Wait a couple of weeks and enjoy. Using this method I've had no spoilage of unrefrigerated jars for over three years because they self seal due to temp of oil used in processing.
