This is from a friend! Mary-Anne Last year, someone brought me some pears that were quite hard. I looked for a recipe to use them and found this one which is delicious. I made a lot of small jars which I used all through the winter (actually I am just finishing the last one) and it is wonderful to give to friends too (especially around Christmas when you long for anything tomato). It is red, yellow and green. Note: I found it a teeny bit too sweet for my taste and plan on using a little less sugar this time. - Françoise 2 1/2 cups tomatoes 2 1/2 cups pears 1/2 cup raisins 1/2 cup green pepper 1/2 cup onion 1 cup sugar 1/2 cup vinegar 1 tsp salt 1/2 tsp ginger powder 1/2 tsp mustard powder 1/8 tsp cayenne pepper up that to at least 1/2 tsp or more 1/4 cup pimiento---use chopped chiles such as serranos-adjust to your heat preference! Cut tomatoes, pears and peppers into same size small cubes. Mix all ingredients except pimiento. Bring to a boil. Boil gently stirring from time to time until 1/2 in volume (about 45 min). Add pimiento. Boil another 3 min. Note: I poured in small canning jars while hot and sealed. They kept very well for almost a year.
