Here is my favorite all-purpose chutney recipe. 5 Hot chiles-I use Thai Dragons 2 Cups apple cider vinegar 1 Tablespoon salt 3 Cups brown sugar 1/4 Cup tamarind paste 4-6 Cups Peeled diced mangoes or pears (green are the best) 2 Small onions, finely chopped 6 Ounces golden raisins 1/2 Teaspoon celery seed 3 Minced garlic cloves 3 Tablespoon grated ginger 4 tablespoon lime juice 1/2 Tablespoon ground clove 1 Teaspoon cinnamon 1 Tablespoon mustard powder In a large pot (not aluminum) combine peppers vinegar, salt and sugar. Cook over medium heat until the sugar dissolves. Add remaining ingredients and bring to a boil. Simmer until jelly like (many hours). Cool and jar. Keep refrigerated. Enjoy El Bigote
