Most commonly, chipotles (chee-POTE-lay) are smoked red jalapenos. When I smoked mine last year, I had to finish drying them out in a dehydrator. Some of the books I've been reading say that the term chipotle has become a generic term for any smoked chile, but I'm sure that's open for debate.
