Potatoes have a fairly high GI, ie turn to sugar faster. Beans are lower, hence turn to sugar more slowly. One impact of this is potatoes give a full feeling quicker but it doesn't last as long. Beans fill up a little more slowly and the feeling lasts longer. Meat's a different ballgame, but I've read that the fat content may reduce the impact and differences of the starches. Just learned about the GI and found it interesting. Riley
