Hi All --

Put up three kinds of pepper jelly last night -- about 8 jars (different
sizes) of each. I canned jalapeno (green), cayenne (red), and habanero
(orange). I am most excited about the habanero -- it smelled fantastic.
I'll stop on my way home tonight and get some cream cheese and bagels so I
can have breakfast tomorrow morning.

Also put up some more ground chiles in vinegar -- two jars of mixed chiles
and a third of only Tabasco. Since I didn't make a chile mash and age it in
oak for 18 months, I don't expect it to taste like Tabasco sauce, but I am
anxious to try it nonetheless.

So here's the thing -- I usually eat pepper jelly with cream cheese and
crackers or bagels or on PBJ sandwiches. This year, however, I have been
blessed with a TON of this jelly. My first instinct is to make a BBQ sauce
or glaze with some of it (ribs or chicken?). After that, though, I'm plumb
out of ideas. Anybody have some good uses for pepper jelly? Desserts?

Matt
