You can also add a bit of an anti-oxidant, such as vitamin C to help
prevent the inevitable oxidative browning reaction that can occur.  I
get Vit C in 25 kilo boxes :-)  This is especially helpful if you are
packaging in something that isn't oxygen proof, such as plastic.
