Someone in another post wondered whether there might be regional differences in sauces. I am wondering along those lines about the differences in heat. I mentioned earlier that the bottle of Ass Kickin Cajun Hot Sauce I tried was not THAT hot whereas I liked but had trouble with the heat in the El Yucateco Green Sauce. While browsing sam mcgees, I see that the Ass Kickin is rated as Extremely Hot and the El Yucateco Green as merely Hot. Nooooo, my bottle of EYGS is not merely "hot." Do you think maybe a person's own personal chemistry also comes into play, reacting differently to the ingredient combos in various sauces??? I don't mean just the degree of built-up tolerance, but personal chemical interactions. (course, mabee I just got two bottles of sauce with peppers that werent' the norm, eh?) BTW, how long can you safely keep opened bottles of sauces around? I refrigerate mine, but do you have to? Tee
