A friend of mine from Texas has been making the following for years as
gifts. She says it is a winner. I am sure you can change the chile instead
of Jalapeno.

I asked her when to put the chile in, she hasn't responded yet.

                         Microwave Pecan Brittle

  Amount  Measure       Ingredient -- Preparation Method

  1                cup  sugar
     1/2           cup  light corn syrup
  1 1/2           cups  pecans
  1         tablespoon  butter or margarine
     1/4      teaspoon  salt
  1           teaspoon  baking soda
  1           teaspoon  vanilla

 Grease a cookie sheet and spatula with butter or margarine.  Combine sugar
and corn syrup in a large microwave bowl (it will boil up pretty high).
Microwave, uncovered, on high for 4 min.  Stir in nuts, butter and salt.
Microwave 4 more min.  Remove from microwave and quickly stir in soda.  It
will become light and foamy.  Quickly pour onto prepared cookie sheet,
spreading thin.  When cooled break into pieces and store in air tight
container.

For an extra treat add 4 tbl chopped pickled jalapeno and a few drops of
green food coloring when you add the nuts. Microwave an extra 1 min. if
adding jalapeno.
