Hi All
Been quiet lately due to Holiday season here,. I have been spending some
time away along the coast fishing and eating lots of fresh fish and
NZCrayfish (Lobster without claws).
I used to get lots of scallops on fishing trips with good divers a number of
years back. Mostly cooked them on the boat straight away without chilies. I
am sure the recipe would be good with some chiles added.
Off up the coast again this weekend. Does wonders for the health:-)
ALLISON'S SCALLOPS
If you have lots just cook in butter with herbs. When cooked thicken liquid
with white wine for sauce. If you don't have lots do this.
You need
200grm scallops 3 cloves garlic
200grm mushrooms 3 tablespoons butter
4-6 spring onions 1/2 cup dry white wine
1/2 cup cream Salt and pepper
75grms butter
Do this
Cut up scallops & mushrooms into roughly the same size pieces. Partly cook
mushrooms in butter & garlic then add scallops. These cook in a few minutes.
Do not overcook.
Add chopped spring onions and wine, reduce heat add cream. Simmer, thicken
with cornflour mixed with a little wine.
Delicious.
