Shrimp heads wrapped in bean curd with a mole sauce. The moles I selected are only found burrowing in select bamboo groves and are only harvested during the Summer festival by boys in Samurai outfits. I used the mole's innards for that slightly bitter taste that only the distinguishing Japanese palate can detect, but I used smoked cayenne pepper, or chipotle in America, to enhance it's natural saltiness.
