I've smoked green jals several times. It seems to take them forever to ripen and then they sometimes start to get rotten spots so I've taken to picking them green and smoking them that way. I know I'm missing out on some of the ripe sweetness but when their blacked, wrinkled and taste of wood smoke I haven't found it made a huge difference. Now fresh is a different matter.
