This was last nights dinner. It was pretty good.
Could've used a bit more heat IMHO but otherwise it
was delicious.

Spicy Tofu & Pork Soup

2 tsp vegetable oil
3 thin boneless pork chops -- cut in
1" cubes
2 cloves garlic -- minced
1 sm onion -- thinly sliced
salt and pepper
2 tbsp chile paste
1/2 tsp sugar
4 cups beef broth
2 zucchini -- 1/4" slices
1 lb soft tofu -- in 1" cubes
1 scallion -- thinly sliced
1 long red chile -- OR
2 small red chiles -- thinly
sliced
Served With:
cooked white rice
In a wok or large skillet, heat the oil. Add the pork,
onions and garlic and saute over high heat, stirring
occasionally, until the pork is no longer pink, about
4 minutes. Season with salt and pepper.
In small bowl, combine chile paste and sugar. Add to
pork mixture in wok. Stir and cook for 2 minutes. Add
broth and bring to a boil. Cover and cook over low
heat, for 10 minutes.
Add zucchini to the wok and cook over medium heat
until almost tender, about 2 minutes. Add the tofu and
simmer for 2 minutes longer. Add the scallions and
chile and simmer for another minute. Ladle into bowls
and serve with cooked white rice on the side.
