Dear List: The other day I was at Walmart and noticed "Melissa's Polenta" with sun-dried tomatoes for $2.88. There were cooking suggestions on the package, and I got one. It comes in the shape of a roll, so that you can slice round pieces off the roll to cook them. I tried two different ways. First, I fried some in olive oil till golden brown. The next time I greased a cookie sheet with olive oil and baked them at 350 for 15 minutes. For the baked group, I first drizzled them with more olive oil and then sprinkled them with Greek seasoning, Ethiopian hot mitmita and a bit of garlic salt. After I took them out of the oven, I place a slice of extra-sharp cheddar cheese on each one. Very good!!! The time I fried them, I put some Vietnamese hot garlic-pepper red sauce on top. It was good, too, but the baked batch were much better. You could flavor them however you like. This polenta is a good product to be able to find in mainstream supermarkets. And it is so easy to fix!
