Honey BBQ Chicken Sandwich with Cabbage Relish Sandwich 4 each Chicken breast fillets (3 ounce portion) 4 each Sourdough Sandwich Rolls 1 TBSP Chicken Seasoning (Recipe follows) ½ cup Onion Cabbage Relsih (recipe follows) ½ cup Honey BBQ Sauce (recipe follows) Method- Season chicken breast with seasoning. Place breast fillets on a baking pan . Bake in a 350 degree oven for 10 minutes or unitl internal temperature reaches 165 degrees. Place chicken breast on roll. Cover with BBQ sauce. Top with ½ ounce of relish. Chicken Seasoning 1 cup Sugar 1 TBSP Chili Powder ½ cup Seasoning Salt 1TBSP Black Pepper 1 TBSP Paprika 2 TSP Garlic Powder 2 TSP Onion Powder ¼ TSP Ground Cumin Method - Combine all ingredinets together in a container. Cover and store . May be stored for 6 months. Onion Cabbage Relsish 4 ounces Canola Oil ¼ cup Sugar 1 Large Onions – diced 1 Small Head Cabbage – shredded ¼ cup Apple Cider Vinegar ½ TSP Caraway Seeds To Taste Salt & Pepper Method - Heat a large saute over medium heat. Add oil. Add cabbage and cook for 5 minutes. Add onion and continue cooking for 10 more minutes. Add sugar and mix well. Add caraway seeds and continue cooking until onions and cabbage are translucent. Add vinegar. Remove pan from heat . May be served hot or cold. BBQ Sauce 3 ½ cups Ketchup 1 TBSP Garlic Powder ¼ cup Apple Cider Vinegar 1 TBSP Onion Powder 1 TBSP Chili Powder Dash Ground cloves 1 TBSP Paprika 2 ½ TBSP Brown Sugar 1 TSP Ground Tumeric 1 cup Water 1 TSP Ground Cumin ½ cup Honey Method: Mix all ingredinets together in a sauce pan. Bring to a simmer and cook for 20 minutes.
