I have a big green piece of crap smoker I got at HD, and it works ok for smoking jals and habs. Leaves a lot to be desired, like a REAL smoker. I start with a small pile of around 12 pieces of charcoal, that I start WITHOUT lighter fluid, and when they are going pretty good add some applewood or hickory. Better to have a low temp instead of high, or you'll end up with pieces of carbon in the shape of peppers. Try this: when the chipotles are about halfway done, (still quite moist) put one, or half of one on top of a cracker with a square of chedder cheese, yum!!
