Oops, I am just getting around to reading last week's mail. The pasta salad thing that I took to the hotluck was just basic your pasta salad. Italian dressing, tomatoes, crab meat (shrimp would also work) a few different kinds of peppers, olives and topped it with parmesan cheese. Let it sit overnight so flavors blend. Very easy, good for hot weather light meals. That cream cheese & chipoltes sounds delicious. I have about 20 coming over Saturday, and will definitely make it. > Just don't do like I did once and use the whole can. Whew!
