Hi Diane, My favorite way as follows: Break stem from pepper Cut in 1/2, leave seeds & veins in Single layer on dehydrator sheet Dry at 100 F (if dehydrator has temp control) or low After 8-12 hours, check Habs, take one out & see if it's like leather When "leathery" state of dryness reached, put some in a clean, dry jar & cap Dry rest until crisp, another 12-24 hrs. Leather Habs for reconstitution, fully dried for grinding into powder Hope this helps, Paul ----- Original Message ----- From: "Diane Salts" <diannesalts@attbi.com> To: "chili" <chile-heads@globalgarden.com> Sent: Friday, 04 October, 2002 3:18 AM Subject: [CH] Drying peppers > Hi all, > I have a need to dry about 2 pounds of habs. I have a dehydrator and just need to know everyone's favorite way of prepping them. Seeds cleaned out or not? Sliced, diced, jullienned? Whole? > Our local farmers market has all the hot peppers for about 2.50 a pound. > Thanks, > Diane
