Well, as it is likely that some of the old timers may have figured that I had done left(like as in DED?)I aint! Here is what I did this morning for breakfast, although it might do as well for lunch, or a very light supper with a piece of ham thrown in! Here then, is Doug's grits: 1 Habanero, chopped medium 1 Jalapeno, " " 1/2 Walla Walla onion, or similar, chopped medium 1 tbls olive oil simmer the above in the oil, and then add to the same pot: 4 cups water, and when boiling, add: 1 cup of grits 1/2 tsp salt 1/2 tsp ground chile, you must have some around! cook this as for grits, and when the grits are done, add about 1/3 cup of grated old cheddar or a similar strong cheese. Stir this in, and allow to sit for a minute or two. Serve with a poached egg....mmmmmgood! If there is any left over, put it in a small casserole dish, let set, refrigerate, and serve the next day,with a slice of ham. Cheers, Doug in BC. Where do we get the grits, you ask?
