Easy there, me'hardy!  EVERYONE knows the difference between apple juice
and apple cider in these parts :-)

Apple juice is the pressing from a single variety of apple (such as
Jonathon or Red Delicious) whereas cider is a blend of pressings from
several varieties.  I learned to make cider back in the early 70's from
the Open Fields landlord.  The best cider is a mix of about 50% tart
apples, 40% sweet, and 10% neutral heavy-bodied.

Or, am I just not a heathen because of MY Scottish ancestory?  :-P
