Generally, in a restaurant fresh beans are blanched to <1> cook em a
bit so cook time for individual service is shorter, and <2> to set the
color (you blanch and then submerge immed. in an ice bath...often the
same is done w/pasta, btw...not fresh stuff, but the dry). The
quickests ways to cook/finish them are either steaming or steam
sauteing. The latter can be fat free whereby you heat (high) the pan,
and pretty much simultneously toss in a couple shots of water with the
veggies (plus any herbs/spices) and cover to steam; usu. I've used
another pan as a lid, but that's cuz <1> when a saute dog, you have a
bunch of pans at your fingertips and <2> you can *never*ever* find a
damn lid, <3> theory of context, i.e. I use a plate to cover a pan and
it magically becomes a "lid" (you should see what I can 'do' with
vegetables). It is the Nature of the Kitchen, methinks. You can use a
wok for this too, but IMO, if you use a wok, just add a bit more water,
cross some chopsticks (make an "x") set a plate on them, cover and
steam. Beans Done. Some may argue this (saute pan) technique is
merely steaming as to "saute" you technically have to use a bit of fat
at the beginning (usu. done just for flavoring and coating of
seasonings/herbs), but this is what my Freedom allows me to do: call
anything I want by any name. I am Don. I am Rael. I am the Eggman,
kookookachoo. Groovy, eh?
