Go to this URL: http://www.pepperfool.com/recipe_home.html In left hand column, click on CANNING. At this menu, click on the 4th recipe down, "Canning Hot Peppers" with 1 change, I use Safflower oil. As recipe states, pour hot oil *slowly* into jar.
