[CH] ribs & such

My son makes awesome ribs.  He uses a dry rub, usually
Pappy's mixed with chipotle and some extra stuff. 
Then he bakes them in dark ale, the puts them on a
slow Q with wood chips for smoking.

They have an taste with such depth and so tender. 
Then it is dipping sauces galore.

Easy stuff.

Speaking of easy for Super Bowl Feast I did a layered
chile-cheese-egg thing that really was a hit.

Fire roasted some Anchos, Serranos, etc
Cooled them, removed the black stuff and seeds
layered them in a large pyrex baking pan, then
alternated w/Mexican grated 4 cheese, another layer of
chiles, then cheese.  Whipped up some eggs a dozen

Pored this over the layers.

Baked for 25 minutes at 375 deg F

Let cool and set a bit

Cut into squares and then dabbed some Tabasco Chipotle
Sauce on each square.

Now you can use as hot of chiles as you want and any
agreeable or favourite hot sauce.

This is stupid easy and good expecially with beer.  As
bad as the Raiders played a couple of tappers were
drained.  And we aren't even Raiders fans.  LOL
