Sorry for not responding, but I did hope that you would look it up, I knew 
there was much to find on the subject.  Did you see that the basic idea is 
the fish is cooked (that is, the proteins are denatured) not by heat but by 
the acidity of the citrus juice?  As for the exact ingredients, you have to 
assume that would vary according to local or seasonal availability.

I've only started to eat it in the last several years; before that, I was 
skeptical - you want me to eat a raw fish salad?  Were it not for the 
chiles, I might not have tried it yet.
