This was last nights dinner - grilled mushroom quesadillas that I served with some leftover tomato-basil soup. Yummy to me. The others weren't too thrilled. * Exported from MasterCook * Grilled Mushroom Quesadillas Recipe By : RisaG Serving Size : 3 Preparation Time :0:00 Categories : Main Dish Mushroom Sandwich Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tbsp extra-virgin olive oil 1 tbsp balsamic vinegar salt and pepper 4 portobello mushrooms -- * see note 3 flour tortillas -- ** see note 1 1/2 cups Pepper Jack cheese -- shredded*** 2 scallions (green & white) -- thinly sliced 1 sm tomato -- seeded & chopped Topping: chopped tomato chopped onion Heat George Foreman Grill (or charcoal or gas grill) until hot. Then top it with the scallions and tomato and then with the cheese. Cover with a bowl and let the cheese melts. Serve with sour cream and cilantro. *** If you like things spicy, try Habanero Jack cheese instead of the Pepper Jack (usually made with jalapenos). ===== RisaG Risa's Food Service http://www.geocities.com/radiorlg Updated 7/20/03 __________________________________ Do you Yahoo!?
