[CH] Last Night's Dinner - Grilled Mushroom Quesadillas

This was last nights dinner - grilled mushroom
quesadillas that I served with some leftover
tomato-basil soup. Yummy to me. The others weren't too
thrilled.

                       Grilled Mushroom Quesadillas

   2      tbsp          extra-virgin olive oil
   1      tbsp          balsamic vinegar
                        salt and pepper
   4                    portobello mushrooms -- * see
note
   3                    flour tortillas -- ** see note
   1 1/2  cups          Pepper Jack cheese --
shredded***
   2                    scallions (green & white) --
thinly sliced
   1      sm            tomato -- seeded & chopped
                        Topping:
                        chopped tomato
                        chopped onion

Heat George Foreman Grill (or charcoal or gas grill)
until hot.

In a small bowl, whisk together the oil and vinegar
and season it with salt and pepper. Brush both sides
of the mushrooms with the oil/vinegar mixture. Grill
until tender. This should take 8-10 minutes, turning
once. Remove from grill; slice 1/2 to 3/4" thick.

Layer one half of each tortilla in the following way:
a bit of cheese, scallions, tomato, mushroom slices,
cheese. Fold over and place on grill. Grill until
cheese is melted and you have nice grill marks. This
should take 3-4 minutes.

Serve with chopped tomatoes, chopped onions and if you
have it cilantro or sour cream.

NOTES : Risa's notes:

* If you can't find portobello mushrooms (those really
large brown mushrooms), you can use shiitake mushrooms
just use about 5 per person because they cook down
quite a bit.
** If on a low carb plan (or Somersizing), omit the
tortillas and grill the portobello. Then top it with
the scallions and tomato and then with the cheese.
Cover with a bowl and let the cheese melts. Serve with
sour cream and cilantro.
*** If you like things spicy, try Habanero Jack cheese
instead of the Pepper Jack (usually made with
jalapenos).
