[CH] Indonesian Hot sauces

Sambal Oelek, Sambal Badjak, Sambal Tomat, Sambal Kemiri, Sambal Kecap,
Sambal Saus, Trassi/Belachan Sambal, and variations are all taste treats of
chiles w/other ingredients as a sauce/Sambal.
Some are available at Oriental markets, but all are easy to make! They're as
hot as you want determined by how many chiles you use. I keep the Sambal
Oelek on hand at all times as a quick fix for stir fries. The Sambal Kemiri
is my favorite! Kemiri/Candlenuts w/garlic and chilies. Candlenuts are hard
to describe, they have a unique flavor and are an important ingredient in
Indonesian cuisine. Sambal Badjak isn't all that hot and is loaded w/onions
and garlic and is black! Trassi/Belachan is also used in Thai cuisine and
known as Kapi (shrimp paste).
Probably more than anyone one wanted to know. <g> Just the hots from another
land.
