GREEN CHILE SAUCE Saute 1 cup finely diced onions in 1/3 cup oil until tender. Add 3 cloves finely minced garlic. Whisk in 1/3 cup flour. Add 2 cups chicken stock or water, slowly at first. Continue to whisk until mixture thickens. Add water if too thick. Add 1 to 1-1/2 cups diced green chiles and salt to taste. Green Chile Sauce 1 onion, chopped 3 to 5 cloves fresh garlic 8 to 10 finely chopped green chiles (stems and seeds removed) 1 tomato, peeled and chopped Sauté onion and garlic in oil until softened.
