Luke, I agree Tabasco (and other Louisiana hot sauces--although Tabasco is my first choice among these) taste great with eggs to me. Eggs Benedict is especially good with Tabasco. I like the vinegary sauces with eggs. But, habs in the morning are not too much for me and so my #1 choice with eggs is Green El Yucateco...a nice wake me up. And as someone else here said once, makes great Green Eggs and Ham :-) Also really good with eggs to me is Try Me brand Yucatan Sunshine (another hab sauce...the name seems so appropriate in the morning, too). Others that are among my favorites with a breakfast of eggs are Chile de Arbol sauce (Salsa Picante de la Viuda is my fav brand) and Cholula (piquin). I sometimes like an egg foo yung for breakfast or usually brunch and when I have that, my favorite sauce is Sriracha. Deb now-hungry-for-eggs in Houston
