Hi, I'm slow getting to my mail - I hope you got some private replies as I didn't notice any on the list. We have an International Farmers Market here so I like to go and see the fruit from different countries. I would swear some of it comes from other planets. I like making fruit sauces. I really don't use exact recipes and adjust to taste. I sometimes write them down in case I hit on a good one. Of course fresh fruit is best but I'll used canned in a tight. I start with a pineapple base and add mango, papaya, passionfruit, the sweet red jarred cherries, and any exotic fruit I can find. I go to a Chinese Kroger type store and buy instant ginger tea. It is freeze dried ginger and honey. It breaks down quickly into whatever you add it to - and it makes a great tea! I put in several packs of this. I then add Red Habs and whatever other pepper I want to toss in. I like a dark honey in mine. And not to beat the Calvin Powder and Campbell Hab Flakes to death but I add those, too (in fact to all my food). After making final taste adjustments I add flavor blending agents - dark spiced rum and an upper end Tequilla, such as El Dueno. I blend all this lightly and put it in the fridge for three or four days before tasting it again. It usually doesn't need adjustments at this point but sometimes I get a hankering for extra ginger or uh, more flavor blending agents! I hope this helps.
