Mark and others, I have had, for years, understood that drying veggies and fruit at temps under 95F would not destroy the vitamin C content. Checked dehydrator instructions sheet and indicated the same thing. If this is not really the case, I sure could save a lot of time by drying at higher temps. In an effort to keep the vitamin C I have always cold-smoked at temps under 100F and electric dried at 95F. Any input and/or references would be appreciated.
