Oooh, I do George's Habanero Olives every year for our 'holiday' dinner at work. They go over real well. Lots of folks just love them, then there are the few who can't/don't read the little marker card placed in front of them that explains that they are hab stuffed olives - extremely hot!, not the pimiento stuffed variety. It's always fun to see expressions on those faces & hear their comments! No, I'm really not a masochist, I just think ignorance in this instance is entertaining. Which reminds me, I've got a large jar of olives in the frig now, and am picking lots of habs (thanks Akiva & Jim for your responses to my 'mystery' peppers question), guess I should get to stuffing olives. Made 3 bottles of 'Mountainman'-style sauce yesterday (hubby roasted the habs for me) but I used limes & lemons instead of vinegar & salt. Do you think there is enough acid in the limes/lemons to preserve the hab mix without refrigeration? Patti
