David Rosengarten on "Taste" did a program on super spicy foods and the beers 
that put out the fire.  Generally, beers make it worse.  Howsomever, 
MicroBrew Brooklyn Lager(?) the hoppiest one and (believe it or not) Rolling 
Rock were touted by him as the two best fire extinguishers.
When I repeated this tale in an Albany, NY, pub that had the Brooklyn Brew on 
tap, and Rolling Rock in the cooler,  the proprietor offered those who heard 
the story some meatballs laced with Tabasco and that foil pouch stuff they 
give you in Diners to "kick up" their chili, and a small sample glass of the 
two beers.  Most agreed that they heavily dampened, but did not extinguish, 
the flames.  One guy said the meatballs weren't hot in the first place.
I remarked to the owner that it was generous of him to do the experiment.  
"Nah," he replied, "if it hadn't worked, you were buying!"
