the posts in the last couple of days about Jim's sauces have reminded me that I have been remiss! this sunday past was the occasion of our annual family reunion and the venue for the (also) annual cousins wing ding. yours truly entered two variations and -- i must humbly aver -- they took first and second place, respectively. first place wings: to eight pounds of wings, precooked (I prefer to parboil, but you do whichever suits you) I added the juice of a lemon, 2 tbsp of worcestershire sauce, 1 teaspoon of salt and 2 of pepper, and about 1/2 a bottle of Ralph's Righteous. Marinade for several hours and grill over open flame till just this side of charred. Yummmmmmmmm! second place: to eight pounds of wings as above, dust with 3 tbsp of flour and combine well. Add 1 tsp each of salt and pepper, 2 tbsp of malt vinegar, 4 tbsp Jim's finishing sauce, 2 tbsp smokin' chipotle, 2 tbsp red savina/garlic, 2 tbsp sambal oelek. Toss 'em up well to make sure they're completely covered and marinade and cook as above. There were several other choices, but these took the taste test hands down! No monetary prizes, but the kudos . . . well . . . I share with Br'er Jim. TTFN roxie BTW: Ontario CH gathering looks to be put off till September.
