Greetings! During "Neptunalia '99" at Daytona Beach, Myron amd I visited his favorite Oriental store. Among homemade Kimchi and other delights I purchased a bottle of Fish Sauce - I had seen it in recipes that Doug Irvine posted to the list. I asked the owner about a choice of two available brands. He recommended the brand that was "not so fishy". Who-Weee! I'm glad I didn't get the "fishy" one. Most folks who have smelled it choke a little, shake their heads and ask if I *really* eat that stuff! The ingredients listed Anchovies, salt and water. I had figured they mash them all together and strain the liquid off - nope! Here is a link to Kasma's page. There is a *very* interesting story about the process of making Fish Sauce: http://users.lanminds.com/~kasma/features.html Her cooking pages are great and do have a lot of references to chilis in cooking. Kasma also corresponded with The Colonel. I thought that The Carp, being a fermenting kinda guy, might want to try his hand at some Fish Sauce in one of his crocks!
