	I both freeze and dry.  I freeze peppers near
the end of the season.  While the pepper plants are
producing at their peak, I dry.  At the moment, I
am doing 5 trays of Jalapeņos, 3 trays of Habaneros,
and 1 tray of cayenne.  The aroma is wonderful!
