Hi all, I am trying to produce a really yummy home-made chili sauce, but I am not winning. Most of my attempts turn out to have no real flavour, and seem quite bland. I have tried cooking them up, I have tried soaking them in salt water over night, and I have tried soaking (& boiling) them in various mixtures of red wine, vinegar and water. But, alas to no avail. I was at a resturant yesterday, and they had the most amazing chili-sauce in a little bowl. I got chatting to the waiter, and he told me that their recipe is a secret, and so are the ingredients, but this much I did get out of him; 1) Grind some chili's with a little onion 2) Leave this for a couple of days to ferment 3) Add chili powder and some herbs (including bay leaves). 3) Add some salt, olive oil and vinegar Now this is an extremely sketchy recipe to waste good chili's on, so if anyone has a better one, please send it to me at the above email address (as I am not receiveing all of the posts from the mailing-list).
