All it really entails is adding spices, herbs, or fruit to vinegar (not the grocery store white distilled type though). Put it in a dark place for about a month, shake it every once in a while. Strain it through cheesecloth or a coffee filter and it's done. When I do make fruit vinegar, I put it in the refrigerator, rather than in my pantry. When I first starting flavoring vinegar, I bought recipe books and searched the web for recipes, but I have discovered that it is more fun to improvise.
