Hey, Green-- I think the chipotles in adobo would work quite well in chili because you'll probably add some canned tomatoes, which I've found help with adobo sauce. There's something about adobo sauce that reminds me of the way I think Band-Aids would taste if I decided to eat them! :-) Depending on the brand, the chipotles can be quite warm, so do taste along the way, should you decide to add more habs, serranos, etc. The magic ingredients I've been throwing into my chili are cocoa powder, cinnamon, and a splash of vinegar or been. Frequently it's vinegar only because the beer has other uses.
