<<Which dehydrators are good and efficient and what one don't work??? I don't think I want to trust myself using the oven at a low heat.>> My American Harvest "Snackmaster Elite" (bought at Walmart) works very well for drying just about anything. Habs I cut in half, Serranos/Jalapenos I score some cuts lengthwise along the pepper to better allow moisture to escape. When I went to Jim Campbell's "grand field opening" last year, I returned home with more peppers than could be processed through the Snackmaster, though. I dried some in it, and some in my oven. Just turn your electric oven to the lowest possible setting where it is warm (about 120-150 F, I think). Peppers dry overnight on baking sheets. If the oven is too hot (by thermometer), crack the oven door a bit. One dehydrator I would stay away from is a cheapie I bought at Meijer. It's a no-name, selling for about $20, and has "House & Home" printed on the base. The clear (light grey) trays melt in spots from the excessive heat generated by this dehydrator, and unless you turn & rotate the trays very frequently, you end up with dead crunchy things rather than nicely dehydrated stuff.
