I have experimented with baking bread with chiles, and have settled now with a recipe that I try to follow. Obviuosly there is room for quite a bit of variation. Anyway, it seem to work for me so I thought I'd share it: Start with fluids at right temprature: 2dl water 1dl milk 3 tablespoons Olive oil yeast ( 1/2 portion of freezedried ) Squeze in (with garlic press): 5 cloves of garlic 6-7 habs ( fresh or frozen - to taste ) Then add: 1 teaspoon of Daves insanity (opt.) 1/2 teaspoon of Brother Bru Brus "African Hot sauce" ( anything else you want to flavour it with ) 1 tablespoon of sugar ( pref. brown ) 1 teaspoons of salt Add flour and work till the dough is smooth. Place in greased form, cut a 1cm groove along the center of the bread, and let it rise for 45 minutes. ( Covered ) Bake at 200 degrees C for 40-45 minutes ( until crust is golden brown ) The bread is delicous straight from the oven, I usually eat it warm with butter and cheese. frank Oslo, Norway - 'Capital of the world, well for 2 days at least'
