I made a recipe sometime this year where they said to soak the rice noodles for 30 minutes in hot water (I think it was from the book Vegetarian Planet?). They became unbelievably gooey. Then I read Nina Simonds Asian Noodles book and she said to soak them for no more than 15. So that is what I do now and they come out perfect. I follow her directions and her directions have never failed me. Mary Anne, please post your recipes. They are always so tasty sounding.
