My SO was also pretty chile-challenged when we met & married. She has
worked up to a pretty decent level of adventure (Road to Hell, Blairs'
Death, straight Chipotle) due to her love of homeopathic herb stuff.
Initially, it still wasn't much of a problem as there was/is always a
bottle of dried chiles on the table and about two-dozen sauces in the
fridge to choose from.
We have plenty of other stuff to fight about ;-)
